Aubergines in vinaigrette

Ingredients: 500 g of aubergine (4 units) 1/2 cup olive oil 1/4 cup red wine vinegar 3 bay leaves 1 tsp. of salt 1 tsp. dried oregano 4 cloves of garlic Buns or cookies Preparation: Cut the aubergines into julienne strips or strips. You can boil the aubergines in salted water, the bay leaves and two tablespoons of vinegar. They can also be sautéed in a pan with a little olive oil. They are placed in a colander to drain them well if they are boiled. In a bowl, mix the olive oil, the wine vinegar, the crushed garlic, the ground oregano, the salt and at the end add the aubergines. They are placed in a glass jar, previously sterilized and left to macerate for a few days. They are rich macerated a few days in advance.
