Pomodoro sauce
Ingredients: ¼ cup of olive oil. 1 onion. 1 carrot. 1 or 2 sticks of celery. 5 basil leaves. 1 kilo of tomatoes. Salt and pepper Preparation: Wash, peel and cut the onion, celery, carrot and tomato. Wash and chop the basil. Sauté the onion, celery, carrot and basil. Crush the tomatoes in a bowl. Reduce the tomato over low heat, cook for 15 to 20 minutes. Add the vegetable sauce. Flavor with salt and pepper as desired. Stir and cook for a few minutes. Serve this sauce over any type of wholemeal pasta, protein, or eggplant or zucchini pasticho.
