Zucchini soup
Ingredients: 3 courgettes 2 teaspoons of olive oil 1 small onion 1/2 leek 4 cups consommé or chicken broth Salt and pepper to taste . Preparation: Cut the onion into squares and the leek into wheels and fry in the olive oil until wilting. Then the chopped courgettes are added in squares with little skin. Everything is fried together. Then add the consommé, bring to a boil and then cook over low heat for about 7 minutes until the courgettes soften and the flavors come together. Let cool and then proceed to blend well. CLEVER!! LETS GO HEALTH LOVERS!!
