Corn cake
Ingredients: 3 tablespoons olive oil. 1 medium onion finely chopped. 6 cloves of minced garlic. 16 oz. ground beef 1 teaspoon of cumin seeds. 1 teaspoon of oregano. 1 cup of meat broth or water. 1 tablespoon of oatmeal. 16 oz. fresh or frozen corn (choclo). 1/4 cup of yellow corn flour. 1/2 cup of liquid skim milk. 1 tablespoon of Stevia. Salt and pepper to taste. Preparation: Preheat oven to 375°F. In a skillet over medium heat, heat the oil over medium heat. Add and sauté onion until translucent. Add the garlic for about 2 more minutes. Then add the ground meat and season with cumin seeds, oregano, salt and pepper to taste, stir well with a wooden spoon until the meat is well cooked and does not look pink, for approximately 8 more minutes. Add a cup of beef broth or water to a boil. Add the tablespoon of flour and mix well for about 5 more minutes. In a food processor or blender, place the corn or corn, the corn starch and the yellow corn flour until it becomes a puree.
