Aubergines capresa salad

Ingredients (6 people) - 3 aubergines - 3 buffalo mozzarella cheeses - 3 units of ripe apple tomato - 18 fresh basil leaves - Olive oil to brown the aubergines. VINAIGRETTE: - 3/4 cup olive oil - 3/4 cup balsamic vinegar - 2 sachets of stevia - Salt and freshly ground pepper to taste. Preparation: Cut the aubergines into slices. Sprinkle them with a little salt and place them in a colander to drain the bitter they keep. Dry them with absorbent paper and brown them on both sides with a little oil on the grill. Let cool. Cut the tomatoes and mozzarella cheese into slices. Place a slice of aubergine on each plate, on top, a slice of cheese, another of tomato, and repeat the same procedure until you end up with aubergine. Intersperse some fresh basil leaves. Prepare the vinaigrette by combining all the ingredients in a bowl. When serving, place a little vinaigrette on the bottom of each plate and sprinkle the salad with another little.
