Pumpkin risotto

HEALTHY RECIPE FOR GUESTS Ingredients (4 people): 1 Kg. of auyama or pumpkin peeled and cut into pieces, 4 Tbsp. of olive oil, 1 liter of chicken broth, 2 diced onions, 4 crushed garlic cloves, 2 cups of brown rice, salt and pepper to taste Preparation: Peel and cut the pumpkin into pieces. Put it in water to boil for 15 minutes and drain it. Crush it with a shaker until it turns into a puree. Sauté the onions and crushed garlic in olive oil. Place the rice in a pot and sweat it with the previous sauce. Heat the broth well, add it to the rice and stir constantly with a wooden paddle until al dente. Add the pumpkin puree and continue stirring. Add salt and black pepper to taste. It is served very hot and flakes of Parmesan cheese are added to each dish.
