Stuffed zucchini with chicken
Ingredients: 4 courgettes 2 chicken breasts Stuffed olives with paprika 2 Onions diced 2 Tbsp. tomato paste 1 chopped red bell pepper Salt and freshly ground black pepper. Preparation: Wash and cut the courgettes in half. Boil in salted water for ten minutes. Remove the pulp with a teaspoon and leave the skin/shell to be able to fill them. Sweat the diced chicken with a little oil, the crushed garlic, the onions, the paprika. Add the tomato paste, the olives and the pulp that was removed from the courgettes. Add salt and freshly ground black pepper to taste. Fill the courgette halves with the stew. Heat in the oven to 350º F and then gratin in broil for a few minutes. CLEVER!!
