Lettuce tacos
A super complete and nutritious lunch, source of the 3 macronutrients: protein (lentils), fats (avocado), and carbohydrates (lentils and vegetables) A very tasty vegan lunch option too, and an idea for those who celebrate #meatlessmonday Ingredients: 8 firm, fresh lettuce leaves 3/4 cup dried lentils 1 onion 1 tomato 1 small avocado juice of half a lemon 1 tablespoon olive oil salt and ground chili to taste. Preparation: Lentils already prepared. On the other hand, wash each lettuce leaf very well and arrange them on a plate. Place the warm lentil mixture on top (or cold if you prefer) and finally, add some cubes of avocado and very fresh tomato (you can add more vegetables or even pico de gallo if you want). VOIL!!
