Pumpkin soup
Ingredients: 1 Kilo of auyama/pumpkin, 1 cup of diced onion, 3 tablespoons of olive oil, Half white part of a leek in wheels, 4 cups of consommé/chicken broth, Salt, Pepper, Mint leaves or coriander to taste . Preparation: Peel and cut the pumpkin into squares, then put it in a pot with enough salted water, bring to a boil and cook until soft. Drain and set aside. Chop the onion and leek and fry until wilted in 3 tablespoons of olive oil. Add the broth and bring to a boil and cook over low heat for 2 or 3 minutes. Let it cool for a few minutes and introduce the consommé with the onion, leek and pumpkin in the blender and blend everything very well. The seasoning is corrected if necessary. When you go to heat it, you can add peppermint or coriander leaves to give it more flavor.
