Ingredients: 1 slightly ripe banana/medium banana. 100 grams of oatmeal or almond flour. 1 egg. 250 milliliters of skim or almond milk. Preparation: With a fork, mash the cambur/banana until it is reduced to a doughy consistency (but not to a puree). In a bowl mix the flour with the egg, the milk and the banana paste. Heat a Teflon pan, put half a teaspoon (or 2 sprays) of coconut or olive oil and add, with a soup spoon, an amount of pancake mix that covers the entire surface of the pan without excess. Repeat this procedure with all of the pancake mix until finished. You can eat your banana pancakes even on their own, and accompany them with 1 glass of freshly made natural juice in the case of children, or with a glass of water, green tea or a cup of coffee, in the case of older children.
