Lettuce tacos stuffed with lentils and avocado
Ingredients: 8 very fresh and firm lettuce leaves. 3/4 cup dried lentils 1 onion. 1 tomato. 1 small avocado. juice of half a lemon 1 tablespoon olive oil salt and ground chili to taste. Preparation: Lentils already prepared. On the other hand, wash each lettuce leaf very well and arrange them on a plate. On top you place the mixture of lentils still warm (or cold if you prefer) and finally, add some cubes of avocado and very fresh tomato (you can add more vegetables or even pico de gallo if you want).
