Oat alfajores

Ingredients: 50gr of coconut oil (approximately 4 tablespoons) ½ cup cornstarch ¼ cup of oatmeal ¼ cup of almond flour ¼ cup of arequipe or caramel cup granulated stevia Pinch of salt. Preparation: Beat the coconut oil and granulated stevia, trying to dissolve the stevia grains. Stir together the starch, the two types of flour, and the salt. Add little by little to the mixture of sweetener and oil, until obtaining a compact mass. Refrigerate for half an hour. Knead and flatten until discs are five centimeters wide and half a centimeter thick. Refrigerate again for 10 minutes. Take to a baking sheet with waxed paper or with a silicone surface. Bake at 175°C/350°F for 20 minutes. Let cool and assemble sandwiches filled with arequipe or caramel.
