Aubergines capresa
Ingredients (6 people): - 3 aubergines - 3 buffalo mozzarella cheese - 3 ripe apple tomatoes - 18 fresh basil leaves - Olive or canola oil to brown the eggplants. Preparation: Cut the aubergines into slices. Sprinkle them with a pinch of salt and place them in a strainer to drain the bitter they keep. Dry them with absorbent paper and brown them on both sides with a little oil on the grill. Let cool. Cut the tomatoes and mozzarella cheese into slices. Place a slice of aubergine on each plate, on top, a slice of cheese, another of tomato, and repeat the same procedure until you end up with aubergine. Intersperse some fresh basil leaves. Garnish with basil leaves on top.
