Vegetable stuffed aubergine
Ingredients: 2 aubergines, 2 diced red peppers, 2 diced yellow peppers, 12 sliced mushrooms, 1 sliced onion, 4 quartered tomatoes, 4 tablespoons fresh rosemary, 1 drizzle of olive oil, 2 tablespoons vinegar, Basil leaves, Salt and pepper. Preparation: Cut the aubergines into slices lengthwise and place them on a grill for a few minutes. Brush the peppers with a drizzle of olive oil and roast them together with the onion until they are slightly cooked. Add the tomatoes and roast for a few more minutes. Mix the rosemary with the vinegar, salt and pepper.
