Quinoa and carrot croquettes
Here we are almost at lunch time and I wanted to leave you this divine recipe for croquettes so that you can make it and tell me how it goes!! Ingredients: 1 cup of washed quinoa 1 finely grated carrot ½ onion 2 eggs Parsley Olive oil Salt and pepper Preparation: Wash the quinoa and cook in 2 cups of boiling water for 20 minutes at slow fire, just like rice. Wash and peel the onion and carrot. Cut the onion into small pieces and grate the carrot. Wash and cut the parsley leaves. Beat 2 eggs and add the chopped parsley, quinoa and dressings to taste. Assemble the croquettes. Bake over medium heat until golden brown and accompany with a salad or baked vegetables, enjoy!!! I love them! Happy night Health Lovers!!
